During summer, Japanese people often eat somen, cold served noodle.
The noodle is cooled with ice, and served separately from cold, soy sauce based sauce, and garnished with green onion, ginger, and seaweed.
It really cools you down and soothing when you have weariness from the heat. And it’s fun outdoor food: it is called nagashi somen (flowing noodle). To read about outdoor style somen, click HERE.
Somen can be good entertaining food. Please look at the picture below.
It’s “Somen on Gellee.” The sauce is added gelatin to make gelee. Prepare some nice cocktail glasses and put the gelee first, and then noodle, and add toppings such as shrimp, calamari, okura, mini tomato and edamame.
I hear that somen and the sauce are sold at Asian section of supermarkets in other countries. If you can’t find the soup, you can also use consomme instead. But if you want to make the authentic sauce, HERE is the recipe.
